Buckwheat Blinis

Ingredients

  • 1 tsp active dry yeast

  • 150g buckwheat flour

  • 1/2 tsp salt

  • 240ml warm milk

  • 2 tsp melted butter

  • 240ml buttermilk

  • 1 egg, separated

Method

- Mix the flour, salt and yeast in a bowl and stir in the warm milk. Cover and let it rise for an hour.

- Stir in the melted butter, egg yolk and buttermilk.

- Whisk the egg white to soft peaks.

- Fold in the egg white and then cover and let it rest for 30 minutes.

- Heat a pan with oil and fry the blinis on a medium heat. Flip the blinis and cook for a minute on the other side, once bubbles appear on the surface.
