BBQ Spare Ribs
This is my go-to meal for when I come home after a long absence - like the time I finished my Duke of Edinburgh expedition and had been trekking on the Yorkshire Dales in the grey drizzle for four days! I needed lots of green vegetables and some meaty goodness - celebratory comfort food !
Ingredients
5 tbsp ketchup
1 tsp mustard
85g muscovado sugar
2 garlic cloves, crushed
350ml orange juice
300ml chicken stock (cooled)
3 tbsp Worcestershire sauce
3 tbsp soy sauce
2 tbsp white wine vinegar
Method
Mix all of the ingredients together.
Cover the ribs and let them marinate for a few hours but preferably overnight in the fridge.
Cook for a couple of hours at 170C.
Serve with a green salad and chips!
