BBQ Spare Ribs

This is my go-to meal for when I come home after a long absence - like the time I finished my Duke of Edinburgh expedition and had been trekking on the Yorkshire Dales in the grey drizzle for four days! I needed lots of green vegetables and some meaty goodness - celebratory comfort food !

Ingredients

  • 5 tbsp ketchup

  • 1 tsp mustard

  • 85g muscovado sugar

  • 2 garlic cloves, crushed

  • 350ml orange juice

  • 300ml chicken stock (cooled)

  • 3 tbsp Worcestershire sauce

  • 3 tbsp soy sauce

  • 2 tbsp white wine vinegar

Method

  • Mix all of the ingredients together.

  • Cover the ribs and let them marinate for a few hours but preferably overnight in the fridge.

  • Cook for a couple of hours at 170C.

  • Serve with a green salad and chips!
