Teriyaki Salmon

This became a staple mid-week supper at uni and brings back many a fond memory. It is very easy to rustle up, yet feels like you have made a big effort. I have adapted and tweaked the recipe a little but it really is a rough guide as it is best suited to your individual tastes.

Method

  • Mix the ingredients together, taste and adjust.

  • Leave the salmon to marinate for at least 30 minutes, but ideally longer if you have the time.

  • Serve with garlicky greens.

Ingredients

  • 3 tbsp soy sauce

  • 3 tbsp hoisin sauce

  • 1 tbsp sesame oil

  • 1 tbsp rice wine vinegar

  • 1 tsp mirin

  • 2 garlic cloves, crushed

  • A large thumb of ginger, grated

  • 1/2 tsp muscavado sugar (to taste)

  • Zest of 2 limes

  • Juice of 1 lime
